Evangelina Munoz Carrasco was born to Lucio Muñoz and Maria Guadalupe Aranda de Muñoz on December 6, 1956. She completed middle school and received a certification of cosmetology in Chihuahua, Chihuahua Mexico. She married Javier Tercero Carrasco on December 9, 1975, in Odessa, Texas. She was a woman of many talents and experiences, but above all, her life was devoted to caring for others. From her family to complete strangers, she gave of herself freely and wholeheartedly. She did not know hate. She only knew love, generosity, and compassion. Feeding people was one of her greatest joys, and she was always ready to throw a party to celebrate any occasion, big or small. She devoted much of her life to creating a beautiful, welcoming home for her children and their families. Her door was always open, and everyone was welcome to stop by without warning, greeted with a warm smile and a delicious home-cooked meal. Hospitality came naturally to her, and she made people feel seen, valued, and at home. For many years, she helped create lifelong memories for others through her work in event decorating. She had a true eye for beauty and transformed important moments into something unforgettable. The care and creativity she poured
into her work reflected the pride she took in making others feel special. Her faith was deeply important to her. She was a devoted Catholic who prioritized her relationship with God and loved teaching others about her faith. She was a dedicated Crucillista at Holy Redeemer for many years, a commitment she cherished. She also took great pride in honoring the Virgin Mary through traditional devotions and rituals throughout the year, practices that brought her peace and a sense of purpose. She was also widely known and lovingly remembered for her famous tamales. Each fall, she would make hundreds of them, and people eagerly counted down the days, always asking her to start earlier and earlier each season. If you ever needed anything, no matter the time of day, she would be there. She loved making people laugh and found joy in connecting with others. It comes as no surprise that she spent many years working in various forms of hospitality, including hotels, school cafeterias, and restaurants. Serving people wasn’t just her job; it was who she was.
